Appenzeller Extra Aged has a golden yellow rind and a firm, straw-colored paste. The flavor is delicate and somewhat fruity owing to the wine or cider wash it receives during curing. Only select cheeses that fulfill a rigid set of standards are considered suitable to be matured for long periods and thus have the opportunity to become Appenzeller Extra.
