Description:
Le Marechal is a hard cheese made by hand from raw cow's milk at just one dairy in the small Swiss town of Corcelles-Aux-Payernes. It owes its special rustic flavour to the Herbs de Provence that are rubbed onto the cheese during the aging process. This cheese reminds one of Gruyere with a savory flavour and a more herbal and ever-so-slightly musty.
